Here's a suggestion on how to prepare vegan Knödel:
- Cut the old bread in small cubes (this is actually the main work)
- Take hot water and put the spices of your choice in, then pour it over the bread cubes
- Mix the bread and the liquid until you have a nice sticky dough (no need to aim for homogeneous consistency)
- Form fist-sized Knödel and boil them in water until they swim
- Enjoy!
